Strawberry Cupcakes

Playground Magazine have just published an extra online edition of their great parenting magazine with lots of great ideas for summer. You can take a look at it here. I was asked to send over a delicious recipe for their readers and my strawberry cupcakes seemed perfect, seasonal and great to bake with the kids during the school holidays.


They are really simple to make and have a surprise spoonful of strawberry jam in the centre. There are lots of British strawberries around at the moment so I wanted to take advantage. The weather is supposed to be good this weekend so why not take the kids and pick your own.

Strawberry Cupcakes Recipe
makes 6




Ingredients
65g margarine
90g caster sugar
75g self raising flour
60g plain flour
1 egg
65ml milk
1/2 tsp vanilla extract
strawberry jam

Method
1) Pre-heat your oven to 180 degrees celcius & prepare your muffin tray with 6 cases.
2) In a bowl cream together the butter & sugars, add the egg and beat well.
3) Weigh out the flours in a separate bowl and measure the milk into a jug with the vanilla extract.
4) Add the flour & milk to the mixture alternately in 3 lots. 
5) Put one spoonful of mixture into each case followed by a small teaspoon of strawberry jam then another spoonful of mixture on top.
6) Bake for 20-25 minutes, remove from the oven and leave to cool completely on a wire rack.
7) Top with your favourite buttercream and a fresh strawberry to serve.
