Happy New Year + Oat, Fruit & Honey Cookie Recipe

Happy New Year to everyone! Glad to be back at work and planning lots of exciting workshops for the new year. I needed a little sweet kick to get me going this afternoon and I have been trying out a new recipe for oat cookies, the idea is that one cookie will keep me going all afternoon, we'll see... They taste delicious so here is the recipe.



Ingredients
100g plain flour
40g rolled oats
40g soft brown sugar
50g caster sugar
1/4 tsp baking powder
1/4 tsp salt
50g butter
1 small egg
1tbsp honey
100g sultanas/raisins

Method
1) Pre-heat the oven to 180 degrees celcius and grease or line 2 cookie trays.
2) Mix togther all the dry ingredients (flour, salt, baking powder, sugars & oats).
3) Rub in the butter until the mixture resembles breadcrumbs and no lumps of butter are visible.
4) Make a well in the cetre and crack in your egg and add the honey.
5) Mix these together with a fork and gradually combine the dry ingredients to form a dough.
6) Stir in the dried fruit.
7) Shape into balls about the size of a ping pong ball and place on the baking trays, flatten the tops slightly with a fork. Leave space for the cookies to spread during baking (I put 4 on each tray).
8) Bake for 12-14 minutes until golden.
9) Cool on the trays for 5 minutes befofre transferring to a wire rack. Store in an airtight container.
